Untitled[edit]

This article makes no mention of the food originally called California-Style pizza. There are several chains in California (Straw Hat Pizza, Round Table Pizza) that make a pizza that is more americanized than italian, topped with a blend of mozzarella, provolone, and mild california cheddar, on aerated planed dough. The sources support the claim made in the article, that CSP was invented in San Francisco simultaneously by the chef at Prego (and later LA's Stars), and the chefs at Chez Panisse. If there are reliable sources that say otherwise or that there is a dispute as to origin we can say so. However, Americanized pizza topped with green olives or grilled chicken doesn't sound like the same thing this article describes, and given the sources, it is not what gave rise to the innovations at Prego and Chez Panisse - so at best it's probably a minor alternate historical use of the term. what is a california-style pizza?[edit]

Brazilian-style California-style[edit]

Here in Brazil we have this interesting "pizza Califórnia": pork or chicken, with a mix of chopped fruits or preserves (typically: fig, peach, pineapple, cherry, plum), and condensed milk. Not to be confused with fruit pizza, which sounds similar but this is actually made with pizza dough and not cookie crust.
