My name is Paddy, I was a trainee at Fifteen (restaurant) Melbourne, and unfortunately can be seen on Jamie's_Kitchen_Australia which was filmed in 2006, Since then my ambition's have been both being the best Chef i can be, but also to write a successful screenplay. Joy.

So Far I've had the privilege (sometimes) of working for the following Chef's :


- Tobie Puttock Of Fifteen Melbourne, Terminus, Ax Cafe.

- Jamie Oliver Of Fifteen Melbourne, River Cafe, Fifteen International.

- Guy Grossi At Grossi Florentino. I think he worked for Herman Schneider

- Anthony D'Augello Worked for Guy Grossi and Florentino, is now the head chef and Mirka at the Tolarnos Hotel.




Cuisine

I find a lot of random information, and also a lot of important information, I try to keep most of it here, but I have also found that Wikipedia lacks information in a lot of articles, it seems to be missing huge chunks of information when it comes to biochemistry relating to food and food science and if it's not missing, it's spread over multiple articles, so you may find articles that don't seem to relate close together.


Egg's are the base of everything, They have a starch eating enzyme which I would really like to learn more about, the Egg is split into two internally, one side the egg white containing 15% proteins and 83% water it contains little in the way of fat, but on the other hand the egg yolk which is 33% of the body weight of the entire egg, is full of fatty acids, and fat soluble vitamins, but also contains Lecithin which in this form is a natural Emulsifier. Eggs have two thirds our daily recommended intake of cholesterol, but a lot of research is showing that not all is absorbed as we expect it would, or that we have a natural 'immunity' when it's sourced from eggs.
